Collaboration 006: Apricity House White Blend x Kosie van der Merwe 2024 (BAG-IN-BOX)

THE WHAT:
This wine is produced from fruit harvested on the steep slopes of the Mosel in Germany. Here, Riesling is king. However, some winemakers are considering what the impact of global warming will have on grape growing in the future, and what the best way to combat that would be. At Staffelter Hof, Kosie van der Merwe works alongside Jan Matthias Klein, pushing the boundaries of organic and regenerative farming, and working with hybrid grape varieties such as Sauvignac, Muscaris and Sauvitage, which are more resistant and hardy to adverse weather conditions.
THE WHO:
Kosie van der Merwe is South African by birth, and was one of the first movers in pioneering the roll out of biodynamic viticulture in the country. He currently finds himself working in the Mosel alongside Jan Matthias Klein of Staffelter Hof, an estate dating back to the 9th century, steeped in history and tradition, but which is also at the vanguard of open mindedness and experimentation when considering the future of sustainability in the wine industry.
THE WHY:
This is a big blend of a number of different varieties (Riesling, Kerner, Muller Thurgau, Sauvignon Blanc, Muscaris, Sauvignac, Sauvitage) which made up surplus wine leftover in the cellar after a particularly good crop of fruit in 2024. Kosie is constantly pushing boundaries and challenging the status quo, whether that be in the vineyard or in the cellar, and so this collaboration was the perfect fit for both our creative minds to reimagine the excess in a fun and playful way. It also happens to be the perfect drop for a house wine for Apricity, the Michelin Green Star restaurant who champions zero-waste cooking and sustainability.

- A 3 L BIB has ~1/10th the emissions of a 750 ml glass bottle (per litre of wine).
- Because BIB is light and space-efficient, one truck of BIB can carry the same wine volume as ~seven trucks of glass, slashing fuel and transport emissions.
- Packaging (esp. glass) is ~40–50% of wine’s carbon footprint.
- BIBs stay fresh for ~3-4 weeks, reducing product waste after opening.
